- 8 oz rice noodles
- 1 cup bell peppers, thinly sliced
- 1 cup cucumber, diced
- 1 cup carrots, shredded
- 3 tbsp toasted sesame oil
- 2 tbsp low sodium soy sauce
- 2 tbsp lime juice (freshly squeezed)
- 1 tbsp honey or maple syrup
- 1/4 cup fresh cilantro, chopped
Instructions
- Cook the rice noodles according to package instructions until tender but firm (al dente). Drain and rinse under cold water.
- While noodles cool, slice bell peppers, dice cucumber, and shred carrots into bite-sized pieces.
- In a small bowl, whisk together toasted sesame oil, soy sauce, lime juice, honey (or maple syrup), and a pinch of salt until smooth.
- In a large bowl, combine the cooled noodles, sliced vegetables, and the dressing.
- Toss gently to coat everything evenly with the dressing and garnish with chopped cilantro.
Notes
For added protein, consider grilled chicken, shrimp, or tofu. Adjust the dressing flavors to taste.
