Description

Ingredients

  • 1 and 1/4 cups all-purpose flour, plus more as needed
  • 1/4 cup fine cornmeal
  • 3 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1/4 cup cold buttermilk, plus more as needed
  • 4 cups fresh or frozen mixed berries
  • 1/4 cup granulated sugar (for filling)
  • 1 tablespoon cornstarch
  • 1 tablespoon fresh lemon juice
  • 1 large egg (for egg wash)
  • 1 tablespoon milk (for egg wash)
  • Coarse sugar for sprinkling

Instructions

  1. Make the crust: In a large bowl, whisk together the flour, cornmeal, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the buttermilk until the dough comes together. Shape into a ball, flatten into a disc, wrap in plastic, and refrigerate for at least 1 hour.
  2. Prepare the filling: In a bowl, mix the berries, sugar, cornstarch, and lemon juice.
  3. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  4. Roll out the dough on a floured surface into a 12 to 14-inch circle and transfer to the baking sheet.
  5. Spoon the berry filling into the center of the dough, leaving a 2 to 3-inch border. Fold the edges over the fruit and brush with egg wash, sprinkling with coarse sugar.
  6. Bake for 28 to 32 minutes, until the filling bubbles and the crust is golden brown. Let cool for 10 minutes before slicing and serving.

Notes

Serve warm with vanilla ice cream or whipped cream for an extra treat. Can also be made ahead and stored in the fridge for up to 3 days.
