Description

Delightful S’more Candy Bars combining buttery crust, sweet marshmallow filling, and rich chocolate coating, perfect for any dessert lover.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 cup packed brown sugar
  • 2 1/2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 7 tbsp unsalted butter, cut into small pieces
  • 4 tbsp cold water
  • 3 tbsp honey
  • 1 tsp vanilla bean paste
  • 3 tbsp ground cinnamon & 3 tbsp granulated sugar (for sprinkling)
  • 2 cups granulated sugar
  • 1/4 cup corn syrup
  • 1/2 cup water
  • 7 tsp agar-agar powder
  • Pinch of salt
  • 1 1/2 tsp vanilla bean paste
  • Vegetable shortening (for coating)
  • 20 oz Ghirardelli dark chocolate melting wafers

Instructions

  1. In a medium mixing bowl, combine the flour, brown sugar, cinnamon, baking powder, baking soda, and salt. Mix well.
  2. Add the butter to the dry mixture and mix until crumbly.
  3. Slowly incorporate cold water, honey, and vanilla bean paste until the dough forms.
  4. Gather the dough into a ball, cover with plastic wrap, and refrigerate for 30 minutes.
  5. Preheat the oven to 350°F (175°C) and prepare a 9′ x 13′ baking pan with parchment paper.
  6. Spread the chilled dough into the pan, and sprinkle with the cinnamon-sugar mixture.
  7. Bake for 20-25 minutes until golden brown, and let cool.
  8. In a pot, combine granulated sugar, corn syrup, and water, and bring to a boil over medium heat.
  9. Bloom agar-agar in 1/2 cup cold water and add to the hot syrup, whisking until fluffy.
  10. Spread the marshmallow layer over the cooled crust and set for 2-3 hours.
  11. Broil for a couple of minutes until the top is golden brown.
  12. Melt chocolate wafers according to package instructions.
  13. Cut bars into squares, dip in melted chocolate, and set on a cooling rack.
  14. Cool completely before serving, preferably overnight.

Notes

For a softer marshmallow filling, add an extra teaspoon of vanilla bean paste. Experiment with different chocolate types for unique flavors.
