- 3/4 cup granulated sugar
- 3/4 cup packed light brown sugar
- 2 large eggs, at room temperature
- 2 teaspoons pure vanilla extract
- 2 and 1/3 cups all-purpose flour, plus more as needed
- 1 and 1/2 teaspoons baking powder
- 1/2 teaspoon cream of tartar
- 1/2 teaspoon salt
- 1 cup white chocolate morsels, plus 1 tablespoon for topping
- 1/4 cup granulated sugar (for the cinnamon sugar filling)
- 2 teaspoons ground cinnamon
Instructions
- Preheat your oven to 350°F. Line a 9-inch square baking pan with parchment paper, ensuring you have an overhang for easy removal later.
- In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together on medium-high speed until fluffy.
- Add the eggs and pure vanilla extract, beating on high speed until combined.
- Gradually add in the flour, baking powder, cream of tartar, and salt, beating on low speed until the mixture comes together. Then, stir in 1 cup of white chocolate morsels.
- Spoon half of the dough into your prepared pan and press it evenly across the bottom.
- In a small bowl, mix the sugar and cinnamon for the filling and sprinkle it over the bottom layer, saving 1 teaspoon for the top.
- Flatten the remaining dough and layer it over the cinnamon swirl until all dough is used.
- Press the remaining white chocolate morsels into the top and sprinkle the reserved cinnamon sugar on top.
- Bake until golden brown, about 32-35 minutes.
- Allow the blondies to cool in the pan for about 1 hour before cutting into squares.
