Description

A delightful twist on classic snickerdoodle cookies, these Snickerdoodle Blondies combine buttery sweetness with a warm hint of cinnamon, perfect for any occasion.


Ingredients

  • 3/4 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 2 and 1/3 cups all-purpose flour, plus more as needed
  • 1 and 1/2 teaspoons baking powder
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 1 cup white chocolate morsels, plus 1 tablespoon for topping
  • 1/4 cup granulated sugar (for the cinnamon sugar filling)
  • 2 teaspoons ground cinnamon

Instructions

  1. Preheat your oven to 350°F. Line a 9-inch square baking pan with parchment paper, ensuring you have an overhang for easy removal later.
  2. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together on medium-high speed until fluffy.
  3. Add the eggs and pure vanilla extract, beating on high speed until combined.
  4. Gradually add in the flour, baking powder, cream of tartar, and salt, beating on low speed until the mixture comes together. Then, stir in 1 cup of white chocolate morsels.
  5. Spoon half of the dough into your prepared pan and press it evenly across the bottom.
  6. In a small bowl, mix the sugar and cinnamon for the filling and sprinkle it over the bottom layer, saving 1 teaspoon for the top.
  7. Flatten the remaining dough and layer it over the cinnamon swirl until all dough is used.
  8. Press the remaining white chocolate morsels into the top and sprinkle the reserved cinnamon sugar on top.
  9. Bake until golden brown, about 32-35 minutes.
  10. Allow the blondies to cool in the pan for about 1 hour before cutting into squares.
