Description

A tender, moist cake infused with rich cinnamon and topped with a luscious cream cheese glaze.


Ingredients

  • 1 box vanilla cake mix (15.25 ounces)
  • 3 large eggs
  • ½ cup vegetable oil
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • ½ cup packed brown sugar
  • ⅓ cup all-purpose flour
  • 1 tablespoon cinnamon
  • ⅓ cup butter (melted)
  • 8 ounces cream cheese (softened)
  • ½ cup butter (softened)
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • ⅓ cup granulated or sanding sugar
  • 2 teaspoons cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the vanilla cake mix, eggs, vegetable oil, buttermilk, and 1 teaspoon of vanilla extract. Beat on medium speed for about 2 minutes until smooth.
  3. In a separate bowl, mix together the brown sugar, all-purpose flour, and 1 tablespoon of cinnamon. Stir in the melted butter to create a crumbly mixture.
  4. Pour half of the batter into a greased Bundt pan. Sprinkle the cinnamon swirl mixture over the batter, then pour the remaining batter on top.
  5. Bake for 40-50 minutes, checking for doneness with a toothpick.
  6. Let the cake cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
  7. For the glaze, beat cream cheese and softened butter until smooth. Gradually add powdered sugar and 1 teaspoon of vanilla extract.
  8. Mix granulated or sanding sugar with remaining 2 teaspoons of cinnamon for the topping.
  9. Once the cake is cooled, drizzle the cream cheese glaze over it and sprinkle with cinnamon sugar.
  10. Slice and serve to enjoy!

Notes

Let the cake cool completely before glazing to prevent the frosting from melting.
