Ingredients

  • 1 cup sourdough starter (active and bubbly)
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour (or whole wheat flour)
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (melted)
  • 1/2 cup fruit jam (your choice)
  • 1 teaspoon vanilla extract
  • Optional toppings: Chopped nuts or seeds

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a large bowl, combine the rolled oats, flour, brown sugar, baking soda, and salt.
  3. In another bowl, mix the sourdough starter, melted butter, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Spread half of the mixture in the greased baking dish, layer with jam, and top with the remaining mixture.
  6. Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
  7. Allow to cool for 15 minutes then slice into squares or rectangles.
