Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup molasses
  • Powdered sugar for dusting
  • Jam (such as raspberry or apricot) for filling

Instructions

  1. In a mixing bowl, whisk together the flour, ground ginger, cinnamon, nutmeg, cloves, baking powder, and salt.
  2. Cream the butter and brown sugar together until light and fluffy, about 3-5 minutes.
  3. Add the egg, vanilla extract, and molasses, and mix until well incorporated.
  4. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  5. Divide the dough in half, wrap in plastic wrap, and refrigerate for at least 1 hour.
  6. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll out one portion of dough to about 1/8 inch thickness on a floured surface.
  8. Cut out shapes from the rolled dough; for half, use a smaller cutter for a cut-out center.
  9. Bake on prepared sheets for 8-10 minutes or until edges are firm but not browned.
  10. Let cookies cool completely on a wire rack.
  11. Spread jam onto whole cookies and sandwich with the cut-out cookies.
  12. Dust with powdered sugar before serving.

Notes

Chill the dough properly for the best texture. Feel free to experiment with different jam flavors.
