Ingredients

- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cloves
- 1/2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1/4 cup molasses
- Powdered sugar for dusting
- Jam (such as raspberry or apricot) for filling
Instructions
- In a mixing bowl, whisk together the flour, ground ginger, cinnamon, nutmeg, cloves, baking powder, and salt.
- Cream the butter and brown sugar together until light and fluffy, about 3-5 minutes.
- Add the egg, vanilla extract, and molasses, and mix until well incorporated.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Divide the dough in half, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll out one portion of dough to about 1/8 inch thickness on a floured surface.
- Cut out shapes from the rolled dough; for half, use a smaller cutter for a cut-out center.
- Bake on prepared sheets for 8-10 minutes or until edges are firm but not browned.
- Let cookies cool completely on a wire rack.
- Spread jam onto whole cookies and sandwich with the cut-out cookies.
- Dust with powdered sugar before serving.
