Ingredients

  • 2 inches fresh ginger, peeled and grated

  • 4 cups vegetable or chicken broth
  • 2 medium carrots, sliced
  • 1 cup sweet corn (fresh or frozen)
  • 1 cup coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the finely chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, grated ginger, and chili pepper; cook for another 2 minutes.
  4. Pour in the broth and bring to a gentle boil.
  5. Add the sliced carrots and sweet corn; reduce heat to a simmer and cook for 10-15 minutes.
  6. Stir in the coconut milk, soy sauce, and lime juice; let simmer for another 5 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh cilantro and lime wedges.
