- 1/2 cup feta cheese, crumbled
- 6 eggs
- 3/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Grease or line an 8-inch (20 cm) baking dish with parchment paper.
- Place thawed spinach in a colander and squeeze out excess water.
- In a large bowl, whisk together eggs, salt, and black pepper until light and airy.
- Arrange spinach and crumbled feta in the baking dish, then pour the egg mixture over it.
- Bake for about 15 minutes until firm and golden. Watch carefully to prevent overbaking.
- Serve warm, optionally alongside a light salad.
