Description

A fluffy and flavorful spinach frittata, perfect for breakfast, lunch, or dinner.


Ingredients

  • 1 lb frozen spinach, thawed and squeezed
  • 1/2 cup feta cheese, crumbled
  • 6 eggs
  • 3/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease or line an 8-inch (20 cm) baking dish with parchment paper.
  3. Place thawed spinach in a colander and squeeze out excess water.
  4. In a large bowl, whisk together eggs, salt, and black pepper until light and airy.
  5. Arrange spinach and crumbled feta in the baking dish, then pour the egg mixture over it.
  6. Bake for about 15 minutes until firm and golden. Watch carefully to prevent overbaking.
  7. Serve warm, optionally alongside a light salad.
