Description

This crustless quiche features sautéed mushrooms and vibrant spinach enveloped in a creamy custard made from eggs, heavy cream, and cheese, perfect for any meal occasion.


Ingredients

  • 1 tbsp Olive oil
  • 3/4 cup Onion (chopped)
  • 2 cloves Garlic (grated)
  • 1 1/2 cups Mushrooms (chopped)
  • 2 cups Spinach (chopped)
  • 1 cup Heavy cream
  • 4 Eggs
  • 1/3 cup Milk
  • 1/2 tsp Kosher salt
  • 1/3 tsp Black pepper
  • 1 cup Mozzarella (grated)

Instructions

  1. Preheat your oven to 200°C (400°F) and set aside a quiche or pie pan.
  2. In a large skillet over medium heat, add olive oil and chopped onions, cooking until lightly golden brown. Add grated garlic and mix well.
  3. Incorporate chopped mushrooms and spinach into the skillet, sautéing until tender, about 10 minutes. Remove from heat and let cool.
  4. In a mixing bowl, combine eggs, heavy cream, milk, salt, and black pepper. Whisk until smooth.
  5. Fold in the sautéed vegetable mixture and grated mozzarella.
  6. Pour the mixture into the prepared pan and bake for 40-45 minutes or until a knife inserted comes out clean.

Notes

For extra flavor, add herbs like thyme or basil, or try different cheeses such as feta or cheddar.
