- 1 tbsp Olive oil
- 3/4 cup Onion (chopped)
- 2 cloves Garlic (grated)
- 1 1/2 cups Mushrooms (chopped)
- 2 cups Spinach (chopped)
- 1 cup Heavy cream
- 4 Eggs
- 1/3 cup Milk
- 1/2 tsp Kosher salt
- 1/3 tsp Black pepper
- 1 cup Mozzarella (grated)
Instructions
- Preheat your oven to 200°C (400°F) and set aside a quiche or pie pan.
- In a large skillet over medium heat, add olive oil and chopped onions, cooking until lightly golden brown. Add grated garlic and mix well.
- Incorporate chopped mushrooms and spinach into the skillet, sautéing until tender, about 10 minutes. Remove from heat and let cool.
- In a mixing bowl, combine eggs, heavy cream, milk, salt, and black pepper. Whisk until smooth.
- Fold in the sautéed vegetable mixture and grated mozzarella.
- Pour the mixture into the prepared pan and bake for 40-45 minutes or until a knife inserted comes out clean.
Notes
For extra flavor, add herbs like thyme or basil, or try different cheeses such as feta or cheddar.
