Description

A delightful Spinach Stuffed Pie with a golden crust and a filling of fresh spinach and creamy cheeses, perfect for gatherings or a cozy family dinner.


Ingredients

  • 1 pre-made pie crust (9-inch)
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups fresh spinach, washed and chopped
  • 1 cup ricotta cheese
  • 1 cup feta cheese, crumbled
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 teaspoon nutmeg
  • Salt and pepper, to taste
  • 1 tablespoon fresh dill or 1 teaspoon dried dill
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic to the skillet and cook for an additional minute.
  4. Gradually add the chopped spinach to the skillet, stirring until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
  5. In a large mixing bowl, combine the ricotta cheese, crumbled feta cheese, grated Parmesan cheese, and eggs. Mix until well combined.
  6. Stir the cooled spinach and onion mixture into the cheese mixture. Add nutmeg, salt, pepper, and dill. Mix until incorporated.
  7. Roll out the pre-made pie crust and fit it into a 9-inch pie dish. Spoon the spinach and cheese filling into the pie crust.
  8. Roll out the second pie crust, place it over the filling, seal the edges, and cut slits in the top crust to allow steam to escape.
  9. Brush the top with the beaten egg.
  10. Bake the pie for 35-40 minutes, or until the crust is golden brown.
  11. Allow to cool for 10 minutes before slicing and serving.

Notes

For extra flavor, try adding red pepper flakes or experimenting with cheese combinations.
