- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 1/2 cup sour cream
- 2 large eggs, at room temperature
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice (optional)
- 1 cup fresh strawberries, diced or 1/4 cup strawberry puree
- 20 Golden Oreo cookies, finely crushed (for topping)
- 1 box (3 ounces) strawberry gelatin mix or freeze-dried strawberries, crushed
- 4 tablespoons unsalted butter, melted (for topping)
- Fresh strawberries, halved (for garnish)
- Whipped cream (for serving)
- White chocolate drizzle (for serving)
Instructions
- Preheat your oven to 325°F (163°C). Prepare mini cupcake liners or silicone molds.
- Blend crushed Golden Oreos with melted butter and sugar until combined, then press into the base of each liner or mold.
- Refrigerate the crust for 30 minutes or bake for 8-10 minutes. Allow to cool.
- Beat cream cheese with sugar until smooth, then mix in sour cream, eggs, vanilla, and optional lemon juice.
- Fold in strawberries or strawberry puree.
- Spoon filling over cooled crusts, bake for 20-25 minutes until set, then cool and refrigerate for at least 2 hours.
- For topping, mix crushed Oreos, gelatin, and melted butter until resembling wet sand.
- Spread topping on a baking sheet, bake at 350°F (177°C) for 5 minutes or let set at room temperature.
- Once chilled, remove cheesecake bites from liners and coat with the topping.
- Garnish with whipped cream, fresh strawberries, or white chocolate drizzle before serving.
Notes
Consider adding orange zest for extra flavor. Substitute cream cheese with Greek yogurt for a lighter version.
