Description

Delicious, bite-sized desserts combining creamy cheesecake and fresh strawberries with a crunchy topping.


Ingredients

  • 2 cups Golden Oreo cookies, finely crushed
  • 5 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/2 cup sour cream
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice (optional)
  • 1 cup fresh strawberries, diced or 1/4 cup strawberry puree
  • 20 Golden Oreo cookies, finely crushed (for topping)
  • 1 box (3 ounces) strawberry gelatin mix or freeze-dried strawberries, crushed
  • 4 tablespoons unsalted butter, melted (for topping)
  • Fresh strawberries, halved (for garnish)
  • Whipped cream (for serving)
  • White chocolate drizzle (for serving)

Instructions

  1. Preheat your oven to 325°F (163°C). Prepare mini cupcake liners or silicone molds.
  2. Blend crushed Golden Oreos with melted butter and sugar until combined, then press into the base of each liner or mold.
  3. Refrigerate the crust for 30 minutes or bake for 8-10 minutes. Allow to cool.
  4. Beat cream cheese with sugar until smooth, then mix in sour cream, eggs, vanilla, and optional lemon juice.
  5. Fold in strawberries or strawberry puree.
  6. Spoon filling over cooled crusts, bake for 20-25 minutes until set, then cool and refrigerate for at least 2 hours.
  7. For topping, mix crushed Oreos, gelatin, and melted butter until resembling wet sand.
  8. Spread topping on a baking sheet, bake at 350°F (177°C) for 5 minutes or let set at room temperature.
  9. Once chilled, remove cheesecake bites from liners and coat with the topping.
  10. Garnish with whipped cream, fresh strawberries, or white chocolate drizzle before serving.

Notes

Consider adding orange zest for extra flavor. Substitute cream cheese with Greek yogurt for a lighter version.
