Description

A delightful twist on traditional cookies, these Strawberry Pop Tart Sugar Cookies are soft and chewy, filled with sweet strawberry jam and topped with a sweet glaze.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup strawberry jam
  • 1 cup powdered sugar
  • 12 tablespoons milk (for glaze)
  • Sprinkles (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the eggs one at a time, then stir in the vanilla extract until incorporated.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet ingredients until just combined.
  5. On a floured surface, roll out the dough to 1/4 inch thickness. Cut into rectangles.
  6. Place half of the rectangles on a lined baking sheet and spoon a small amount of strawberry jam onto each. Top with remaining rectangles and press edges to seal.
  7. Bake for 10-12 minutes until lightly golden brown.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
  9. Mix powdered sugar with milk to make the glaze and drizzle over cooled cookies; add sprinkles if desired.
