- 1.25 cups diced fresh strawberries
- 2 tsp fresh lemon juice
- 2 cups all-purpose flour
- 0.5 cup granulated sugar
- 2 tsp baking powder
- 0.25 tsp salt
- 6 Tbsp cold unsalted butter, cubed
- 0.5 cup cold heavy cream
- 1 tsp vanilla extract
- Coarse sugar (as needed for topping)
Instructions
- Toss the diced strawberries with lemon juice and 1 Tbsp of sugar; allow to macerate for 10 minutes.
- In a separate bowl, whisk together flour, remaining sugar, baking powder, and salt.
- Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
- Pour in the cold cream and vanilla extract; stir until a shaggy dough forms.
- Drain the strawberries and gently fold them into the dough.
- Portion the dough into 2-Tbsp mounds on parchment-lined baking sheets and sprinkle with coarse sugar.
- Bake in a preheated oven at 375°F (190°C) for 14–16 minutes until edges are golden and slightly soft in the middle.
- Cool on the pan for 5 minutes before transferring to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to 4 days or freeze for longer storage.
