Description

A delightful snack combining crunchy Rice Chex with creamy white chocolate and bursts of strawberry flavor.


Ingredients

  • 5 cups Rice Chex cereal
  • 1 cup white chocolate chips
  • 1/2 cup white chocolate chips
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1 big box strawberry gelatin mix
  • 1 cup powdered sugar
  • 1 cup freeze-dried strawberries, crushed

Instructions

  1. Place the Rice Chex cereal into a large mixing bowl and set aside.
  2. In a microwave-safe bowl, combine the white chocolate chips and unsalted butter. Microwave at 30-second intervals, stirring in between, until fully melted and smooth.
  3. Stir in the vanilla extract to the melted chocolate mixture, blending until fully incorporated.
  4. Pour the melted chocolate mixture over the Rice Chex cereal. Using a spatula, gently toss to ensure every piece is coated.
  5. In a separate bowl, combine the strawberry gelatin mix and powdered sugar, mixing well.
  6. Transfer the chocolate-coated cereal into a large resealable bag. Add the strawberry-powder mixture, seal the bag, and shake until coated.
  7. Spread the coated cereal on a lined baking sheet to cool. Optionally, sprinkle crushed freeze-dried strawberries on top.
  8. Once cooled, transfer to an airtight container for storage.

Notes

For added flavor, dark or milk chocolate can be used instead of white chocolate. Consider adding nuts or coconut flakes for extra texture.
