Description

A delightful casserole that combines street corn flavors with tender chicken, creamy textures, and a crunchy tortilla chip topping.


Ingredients

  • 2 cups cooked shredded chicken
  • 2 cups frozen corn
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 packet taco seasoning
  • 1 cup crushed tortilla chips
  • 1/2 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, corn, cream cheese, cheddar cheese, sour cream, and taco seasoning. Mix until evenly incorporated.
  3. Season with salt and pepper to taste.
  4. Pour the mixture into a greased casserole dish and spread it evenly.
  5. Top with crushed tortilla chips and chopped green onions.
  6. Bake for 25-30 minutes, or until bubbly and golden on top.
  7. Remove from the oven and let it cool for a few minutes before serving.

Notes
