Description

A delightful one-pan meal combining seasoned ground beef, sautéed onions, and vibrant bell peppers, perfect for busy weeknights.


Ingredients

  • 1 pound ground beef or turkey
  • 1 cup uncooked rice
  • 2 cups water or beef broth
  • 1 large onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes, undrained
  • 1 tablespoon tomato paste
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 tablespoons olive oil
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add onion and garlic, sauté for 2-3 minutes until onion is translucent.
  3. Add the ground beef or turkey to the skillet. Cook and stir until browned and fully cooked through, about 5-7 minutes.
  4. Stir in the diced green and red bell peppers and cook for another 3-4 minutes until they begin to soften.
  5. Add the uncooked rice to the skillet, mixing well with the meat and vegetable mixture.
  6. Pour in the water or beef broth, diced tomatoes with their juice, and tomato paste. Stir well to combine.
  7. Season the mixture with Italian seasoning, paprika, salt, and pepper.
  8. Bring everything to a simmer, cover the skillet with a lid, and reduce the heat to low. Let it cook for about 20-25 minutes, or until the rice is tender and the liquid is mostly absorbed.
  9. Once the rice is cooked, sprinkle the shredded mozzarella or cheddar cheese evenly over the top of the skillet.
  10. Cover again and let the cheese melt, about 3 minutes.
  11. Garnish with fresh parsley or basil before serving, if desired.

Notes

Feel free to swap beef for turkey or chicken, or keep it vegetarian with black beans or lentils.
