A delightful sandwich that transforms the classic grilled cheese into an extraordinary experience with Gouda cheese, sun-dried tomatoes, and basil pesto.

- 4 slices of sourdough bread
- 1 cup of shredded Gouda cheese
- 1/4 cup of sun-dried tomatoes, chopped
- 1/4 cup of basil pesto
- 2 tablespoons of unsalted butter, softened
- Salt and pepper to taste
Instructions
- Preheat a skillet or griddle over medium heat.
- Spread softened butter evenly on one side of each slice of sourdough bread.
- On the unbuttered side of two bread slices, layer half of the shredded Gouda cheese evenly.
- Add chopped sun-dried tomatoes on top of the Gouda.
- Spread a layer of basil pesto over the tomatoes.
- Top each slice with the remaining Gouda cheese, then place the second slice of bread on top, buttered side facing out.
- Place sandwiches on the preheated skillet and cook for about 4-5 minutes until golden brown and crispy.
- Carefully flip the sandwiches and cook for an additional 4-5 minutes until golden brown and the cheese is melty.
- Remove sandwiches from the skillet and let them cool for a minute before slicing.
- Serve warm and enjoy!
Notes
Use high-quality cheese for the best melt and flavor. Consider adding sliced avocado or roasted red peppers for extra taste.
