Description

A delightful sandwich that transforms the classic grilled cheese into an extraordinary experience with Gouda cheese, sun-dried tomatoes, and basil pesto.


Ingredients

  • 4 slices of sourdough bread
  • 1 cup of shredded Gouda cheese
  • 1/4 cup of sun-dried tomatoes, chopped
  • 1/4 cup of basil pesto
  • 2 tablespoons of unsalted butter, softened
  • Salt and pepper to taste

Instructions

  1. Preheat a skillet or griddle over medium heat.
  2. Spread softened butter evenly on one side of each slice of sourdough bread.
  3. On the unbuttered side of two bread slices, layer half of the shredded Gouda cheese evenly.
  4. Add chopped sun-dried tomatoes on top of the Gouda.
  5. Spread a layer of basil pesto over the tomatoes.
  6. Top each slice with the remaining Gouda cheese, then place the second slice of bread on top, buttered side facing out.
  7. Place sandwiches on the preheated skillet and cook for about 4-5 minutes until golden brown and crispy.
  8. Carefully flip the sandwiches and cook for an additional 4-5 minutes until golden brown and the cheese is melty.
  9. Remove sandwiches from the skillet and let them cool for a minute before slicing.
  10. Serve warm and enjoy!

Use high-quality cheese for the best melt and flavor. Consider adding sliced avocado or roasted red peppers for extra taste.
