Ingredients

  • 5 medium apples, peeled, cored, and chopped into ¼-inch cubes
  • 1/3 cup brown sugar
  • 2 tablespoons granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon fresh lemon juice
  • 1 cup water
  • 2 tablespoons cornstarch
  • 8 flour tortillas (6-inch)
  • 1/3 cup granulated sugar (for chips)
  • 1 ½ teaspoons ground cinnamon (for chips)
  • Non-stick cooking spray

Instructions

  1. In a medium mixing bowl, stir together the diced apples, brown sugar, granulated sugar, ground cinnamon, and lemon juice.
  2. Transfer the apple mixture to a saucepan and add the water. Bring to a boil, cover, and simmer until apples are tender (about 10 minutes).
  3. Remove ½ cup of the cooking liquid, whisk in cornstarch until smooth, then return it to the saucepan and cook until thickened.
  4. Preheat your oven to 350°F (175°C).
  5. Mix granulated sugar and cinnamon in a small bowl. Spray or brush tortillas with cooking spray, sprinkle with cinnamon sugar, cut into wedges, and bake for 9-12 minutes or until crisp.
  6. Cool chips on wire racks before serving.

Notes

For extra flavor, add a pinch of nutmeg or cardamom. Adjust the sweetness based on apple tartness.
