- 5 medium apples, peeled, cored, and chopped into ¼-inch cubes
- 1/3 cup brown sugar
- 2 tablespoons granulated sugar
- 2 teaspoons ground cinnamon
- 1 teaspoon fresh lemon juice
- 1 cup water
- 2 tablespoons cornstarch
- 8 flour tortillas (6-inch)
- 1/3 cup granulated sugar (for chips)
- 1 ½ teaspoons ground cinnamon (for chips)
- Non-stick cooking spray
Instructions
- In a medium mixing bowl, stir together the diced apples, brown sugar, granulated sugar, ground cinnamon, and lemon juice.
- Transfer the apple mixture to a saucepan and add the water. Bring to a boil, cover, and simmer until apples are tender (about 10 minutes).
- Remove ½ cup of the cooking liquid, whisk in cornstarch until smooth, then return it to the saucepan and cook until thickened.
- Preheat your oven to 350°F (175°C).
- Mix granulated sugar and cinnamon in a small bowl. Spray or brush tortillas with cooking spray, sprinkle with cinnamon sugar, cut into wedges, and bake for 9-12 minutes or until crisp.
- Cool chips on wire racks before serving.
Notes
For extra flavor, add a pinch of nutmeg or cardamom. Adjust the sweetness based on apple tartness.
