- 4 boneless skinless chicken breasts
- 1/2 cup tahini
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup breadcrumbs (panko for extra crunch)
- 1/2 cup flour
- 2 large eggs
- Fresh parsley, chopped for garnish
Instructions
- Place the chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1/2 inch.
- In a bowl, mix tahini, lemon juice, olive oil, garlic powder, paprika, salt, and pepper until smooth.
- Coat each chicken breast in flour, then the tahini mixture, and finally in breadcrumbs.
- Heat about 1/4 inch of oil in a skillet over medium heat.
- Carefully place the breaded chicken in the hot oil and fry for 5-7 minutes on each side until golden and cooked through.
- Transfer to a paper towel-lined plate to drain excess oil.
- Garnish with chopped parsley before serving.

For a healthier twist, consider using whole-grain breadcrumbs or baking the schnitzels instead of frying.
