Ingredients

  • 4 boneless skinless chicken breasts
  • 1/2 cup tahini
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup breadcrumbs (panko for extra crunch)
  • 1/2 cup flour
  • 2 large eggs
  • Fresh parsley, chopped for garnish

Instructions

  1. Place the chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1/2 inch.
  2. In a bowl, mix tahini, lemon juice, olive oil, garlic powder, paprika, salt, and pepper until smooth.
  3. Coat each chicken breast in flour, then the tahini mixture, and finally in breadcrumbs.
  4. Heat about 1/4 inch of oil in a skillet over medium heat.
  5. Carefully place the breaded chicken in the hot oil and fry for 5-7 minutes on each side until golden and cooked through.
  6. Transfer to a paper towel-lined plate to drain excess oil.
  7. Garnish with chopped parsley before serving.
