Ingredients

  • 1 cup coconut milk
  • 1 cup sugar
  • 3 eggs
  • 1/2 cup cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup water
  • 1/4 cup shredded coconut (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the coconut milk, sugar, and eggs until well combined.
  3. In another bowl, mix the cornstarch and salt. Gradually add it to the coconut mixture, stirring continuously to prevent lumps.
  4. Stir in the vanilla extract and water until smooth.
  5. Pour the mixture into a greased baking dish.
  6. If using, sprinkle shredded coconut on top.
  7. Bake for 30-35 minutes or until the custard is set and lightly golden on top.
  8. Let cool before serving.
