  • 8 oz cream cheese, softened and cubed
  • 1 cup half and half
  • 1/2 tsp salt
  • Pepper to taste
  • Optional: chives for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the potatoes by peeling and cubing them, then rinsing under cold water.
  3. Boil the potatoes in salted water until fork-tender, about 10-15 minutes, then drain.
  4. Return potatoes to the pot on low heat to evaporate excess moisture for about 3 minutes.
