- 3 ripe bananas
- 1/2 cup cocoa powder
- 1/2 cup milk chocolate chips
- 1/2 cup semi-sweet chocolate chips
- 2 room temperature eggs
- 1/2 cup sour cream
- 1 cup brown sugar
- 1/3 cup oil
- 2 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup sweetened coconut
- Quality caramel sauce
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In another bowl, whisk the oil and brown sugar together until well combined.
- Stir in the eggs and sour cream until smooth.
- Gently fold in the mashed bananas and chocolate chips until just mixed.
- Transfer the batter into a greased loaf pan.
- Bake for 60 minutes, then tent with foil and bake for an additional 20 minutes.
- Insert a toothpick into the center; if it comes out clean, it’s ready.
- Let the bread cool completely in the pan.
- Toast the coconut in a skillet over medium-low heat until golden brown.
- Drizzle with caramel sauce before serving.
Notes
Ensure that the bread is not overbaked to maintain moisture. Can be frozen for up to three months.
