- 1 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 lb ground turkey
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tsp salt
- ½ tsp black pepper
- 2 apples, chopped (preferably sweet varieties like Gala or Fuji)
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (28 oz) crushed tomatoes
- 1 cup chicken broth
Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sauté until soft and translucent, about 5 minutes.
- Add the ground turkey to the pot and cook until browned, breaking it into smaller pieces, about 5–7 minutes.
- Stir in the spices: chili powder, cumin, smoked paprika, salt, and black pepper, toasting for about 1 minute.
- Mix in the chopped apples, drained beans, crushed tomatoes, and chicken broth. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for 25–30 minutes.
- Taste and adjust seasoning before serving.
Notes
For added flavor, consider garnishing with fresh cilantro or a dollop of sour cream. Leftovers store well in the refrigerator for up to 4 days and freeze beautifully.
