A luscious triple chocolate mousse cake with layers of dark, milk, and white chocolate, perfect for any special occasion.

- 8 oz dark chocolate (chopped)
- 6 oz milk chocolate (chopped)
- 6 oz white chocolate (chopped)
- 3 cups heavy cream (divided)
- 9 large eggs
- 1.5 cups all-purpose flour
- 0.75 cup unsweetened cocoa powder
- 1.25 cups granulated sugar
- 0.5 cup butter (softened)
- 2 tsp vanilla extract
- 1.5 tsp baking powder
- 0.5 tsp salt
Instructions
- Preheat your oven to 350°F (175°C) and prepare two 9-inch round pans by greasing and lightly flouring them.
- Cream the softened butter and granulated sugar together until fluffy. Beat in the eggs one at a time.
- Whisk together the flour, cocoa powder, baking powder, and salt. Alternately add the dry mixture and 1 cup of heavy cream to the wet mixture.
- Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, until a toothpick comes out clean. Allow to cool completely.
- Melt the dark chocolate and whisk in 3 egg yolks. Fold in whipped egg whites and 2/3 cup whipped cream to create dark chocolate mousse.
- Repeat the melting and folding process with the milk chocolate and white chocolate, using the appropriate amounts of egg and cream.
- Cut the cooled cake layers in half to create four rounds. Layer in a springform pan: cake, dark mousse, cake, milk mousse, cake, white mousse, and top with the last cake layer.
- Chill for at least 4 hours or overnight. Optionally, glaze with chocolate ganache before serving.
Notes
Serve with vanilla ice cream or fresh whipped cream. Decorate with chocolate ganache or fresh fruit for a special touch.
