Description

A luscious triple chocolate mousse cake with layers of dark, milk, and white chocolate, perfect for any special occasion.


Ingredients

  • 8 oz dark chocolate (chopped)
  • 6 oz milk chocolate (chopped)
  • 6 oz white chocolate (chopped)
  • 3 cups heavy cream (divided)
  • 9 large eggs
  • 1.5 cups all-purpose flour
  • 0.75 cup unsweetened cocoa powder
  • 1.25 cups granulated sugar
  • 0.5 cup butter (softened)
  • 2 tsp vanilla extract
  • 1.5 tsp baking powder
  • 0.5 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round pans by greasing and lightly flouring them.
  2. Cream the softened butter and granulated sugar together until fluffy. Beat in the eggs one at a time.
  3. Whisk together the flour, cocoa powder, baking powder, and salt. Alternately add the dry mixture and 1 cup of heavy cream to the wet mixture.
  4. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, until a toothpick comes out clean. Allow to cool completely.
  5. Melt the dark chocolate and whisk in 3 egg yolks. Fold in whipped egg whites and 2/3 cup whipped cream to create dark chocolate mousse.
  6. Repeat the melting and folding process with the milk chocolate and white chocolate, using the appropriate amounts of egg and cream.
  7. Cut the cooled cake layers in half to create four rounds. Layer in a springform pan: cake, dark mousse, cake, milk mousse, cake, white mousse, and top with the last cake layer.
  8. Chill for at least 4 hours or overnight. Optionally, glaze with chocolate ganache before serving.

Notes

Serve with vanilla ice cream or fresh whipped cream. Decorate with chocolate ganache or fresh fruit for a special touch.
