Instructions
- Preheat oven to 375°F (190°C).
- Pierce each sweet potato several times with a fork and place them on a baking sheet.
- Bake sweet potatoes for about 60 minutes, until tender.
- Cool slightly, cut each potato in half lengthwise, and scoop out the flesh into a mixing bowl.
- Mash the sweet potato flesh with butter, brown sugar, cinnamon, and nutmeg, adding milk or cream for consistency if necessary.
- Season with salt and pepper.
- Spoon the mixture back into the potato skins.
- Top with sour cream or additional brown sugar and cinnamon if desired.
- Return to the oven and bake for another 15-20 minutes until tops are golden brown.
