Description

Ingredients

  • 4 medium sweet potatoes, scrubbed clean
  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup sour cream (optional for topping)
  • Salt and pepper to taste
  • Milk or cream as needed for consistency

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Pierce each sweet potato several times with a fork and place them on a baking sheet.
  3. Bake sweet potatoes for about 60 minutes, until tender.
  4. Cool slightly, cut each potato in half lengthwise, and scoop out the flesh into a mixing bowl.
  5. Mash the sweet potato flesh with butter, brown sugar, cinnamon, and nutmeg, adding milk or cream for consistency if necessary.
  6. Season with salt and pepper.
  7. Spoon the mixture back into the potato skins.
  8. Top with sour cream or additional brown sugar and cinnamon if desired.
  9. Return to the oven and bake for another 15-20 minutes until tops are golden brown.
  10. Serve warm.
