- 1 large head of cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 2 tablespoons lemon juice (freshly squeezed)
- Zest of 1 lemon
- 2 tablespoons maple syrup
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the cauliflower florets with olive oil, sea salt, and black pepper. Toss well until evenly coated.
- Spread the seasoned cauliflower onto the prepared baking sheet in a single layer and roast for 25-30 minutes, flipping halfway through.
- In a small bowl, mix together lemon juice, lemon zest, maple syrup, garlic powder, and onion powder to make the glaze.
- Once the cauliflower is roasted, drizzle the glaze over it and toss gently to coat.
- Return the glazed cauliflower to the oven and roast for an additional 5-7 minutes to caramelize the glaze.
- Transfer to a serving dish and garnish with chopped fresh parsley.
Notes
For an extra burst of flavor, add chili flakes or smoked paprika. Avoid overcrowding the baking sheet for a better roast.
