Description

A delightful dish that marries the bright notes of lemon with the earthy goodness of cauliflower, coated in a zesty lemon pepper sauce.


Ingredients

  • 1 large head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 2 tablespoons lemon juice (freshly squeezed)
  • Zest of 1 lemon
  • 2 tablespoons maple syrup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the cauliflower florets with olive oil, sea salt, and black pepper. Toss well until evenly coated.
  3. Spread the seasoned cauliflower onto the prepared baking sheet in a single layer and roast for 25-30 minutes, flipping halfway through.
  4. In a small bowl, mix together lemon juice, lemon zest, maple syrup, garlic powder, and onion powder to make the glaze.
  5. Once the cauliflower is roasted, drizzle the glaze over it and toss gently to coat.
  6. Return the glazed cauliflower to the oven and roast for an additional 5-7 minutes to caramelize the glaze.
  7. Transfer to a serving dish and garnish with chopped fresh parsley.

Notes

For an extra burst of flavor, add chili flakes or smoked paprika. Avoid overcrowding the baking sheet for a better roast.
