Ingredients
Scale
- 4 medium-sized beets, roasted and cooled
- 4 cups mixed greens (such as arugula and spinach)
- 1/2 cup crumbled goat cheese
- 1/2 cup walnuts, toasted
- 1/4 cup dried cranberries
- 1/4 cup thinly sliced red onion
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) if you need to roast fresh beets.
- Wash and trim the beets, then wrap them individually in aluminum foil.
- Place the wrapped beets on a baking sheet and roast in the oven for about 45-60 minutes, or until they are fork-tender.
- Once roasted, allow the beets to cool slightly before peeling off their skins.
- Cut the beets into wedges or dice them according to your preference.
- In a large salad bowl, combine the mixed greens, roasted beets, crumbled goat cheese, walnuts, dried cranberries, and sliced red onion.
- In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper to create the dressing.
- Drizzle the dressing over the salad and toss gently to combine all the ingredients evenly.
- Taste and adjust the seasoning if necessary.
- Serve immediately and enjoy your vibrant winter beet salad!
Notes
Roasting the beets enhances their natural sweetness. For a lighter option, swap goat cheese with avocado or hummus.
