Ingredients

  • 4 medium-sized beets, roasted and cooled
  • 4 cups mixed greens (such as arugula and spinach)
  • 1/2 cup crumbled goat cheese
  • 1/2 cup walnuts, toasted
  • 1/4 cup dried cranberries
  • 1/4 cup thinly sliced red onion
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) if you need to roast fresh beets.
  2. Wash and trim the beets, then wrap them individually in aluminum foil.
  3. Place the wrapped beets on a baking sheet and roast in the oven for about 45-60 minutes, or until they are fork-tender.
  4. Once roasted, allow the beets to cool slightly before peeling off their skins.
  5. Cut the beets into wedges or dice them according to your preference.
