Eerie Witch Finger Cookies are a haunting treat, combining soft buttery texture with nutty pistachios and sweet jam for a spooky delight.

- 1 1/4 cups confectioners’ sugar
- 1 cup unsalted butter, softened
- 1 large egg
- 1 tsp almond extract
- 1 tsp pure vanilla extract
- 5 to 6 drops green food coloring
- 2 3/4 cups all-purpose flour
- 1 tsp kosher salt
- 1/2 cup finely chopped pistachios, plus more for decorating
- 3/4 cup sliced almonds
- 1/2 cup cherry, strawberry, or raspberry jam
Instructions
- Using a stand mixer, beat together confectioners’ sugar and butter until pale and fluffy, about 2 minutes.
- Add the egg and mix until fluffy, about 1 minute.
- Mix in almond extract, vanilla extract, and green food coloring until fully incorporated.
- In a separate bowl, whisk together flour and salt, then gradually mix into the butter mixture until just combined.
- Fold in chopped pistachios and refrigerate the dough for at least 30 minutes.
- Preheat oven to 375°F and line baking sheets with parchment paper.
- Shape the chilled dough into finger shapes and place on baking sheets, pressing almonds into the tips for nails.
- Pinch below the almond to create knuckles and carve lines for detail.
- Freeze the formed cookies for 30 minutes, then bake for 7 to 9 minutes or until edges are firm.
- Cool slightly and add jam on the tip of each cookie for a “blood oozing” effect before serving.

These cookies can be prepared ahead of time and refrigerated or stored in an airtight container for freshness.
