Description

Eerie Witch Finger Cookies are a haunting treat, combining soft buttery texture with nutty pistachios and sweet jam for a spooky delight.


Ingredients

  • 1 1/4 cups confectioners’ sugar
  • 1 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp almond extract
  • 1 tsp pure vanilla extract
  • 5 to 6 drops green food coloring
  • 2 3/4 cups all-purpose flour
  • 1 tsp kosher salt
  • 1/2 cup finely chopped pistachios, plus more for decorating
  • 3/4 cup sliced almonds
  • 1/2 cup cherry, strawberry, or raspberry jam

Instructions

  1. Using a stand mixer, beat together confectioners’ sugar and butter until pale and fluffy, about 2 minutes.
  2. Add the egg and mix until fluffy, about 1 minute.
  3. Mix in almond extract, vanilla extract, and green food coloring until fully incorporated.
  4. In a separate bowl, whisk together flour and salt, then gradually mix into the butter mixture until just combined.
  5. Fold in chopped pistachios and refrigerate the dough for at least 30 minutes.
  6. Preheat oven to 375°F and line baking sheets with parchment paper.
  7. Shape the chilled dough into finger shapes and place on baking sheets, pressing almonds into the tips for nails.
  8. Pinch below the almond to create knuckles and carve lines for detail.
  9. Freeze the formed cookies for 30 minutes, then bake for 7 to 9 minutes or until edges are firm.
  10. Cool slightly and add jam on the tip of each cookie for a “blood oozing” effect before serving.

Notes

These cookies can be prepared ahead of time and refrigerated or stored in an airtight container for freshness.
