Ingredients

  • 2 1/4 cups of all-purpose flour
  • 1 teaspoon of salt
  • 1 teaspoon of instant yeast
  • 3/4 cup of warm water (approximately 110°F or 45°C)
  • 1 tablespoon of olive oil
  • 1 cup of San Marzano tomatoes, crushed
  • Salt and pepper to taste
  • 8 ounces of fresh mozzarella, sliced
  • Fresh basil leaves
  • Olive oil for drizzling
  • Optional: Red pepper flakes

Instructions

  1. In a large mixing bowl, combine the all-purpose flour, salt, and instant yeast.
  2. Gradually add the warm water and olive oil to the dry ingredients, mixing until a rough dough forms.
  3. Turn the dough onto a lightly floured surface and knead for approximately 10 minutes.
  4. Shape the dough into a ball and transfer it to a lightly oiled bowl, covering with a damp cloth.
  5. Allow it to rise in a warm place for 1 to 1.5 hours, until doubled in size.
  6. Preheat your wood-fired oven to its highest setting (approximately 900°F or 480°C).
  7. Once the dough has risen, gently punch it down and divide it into two equal portions.
  8. Roll each portion into a tight ball and cover with a damp cloth for 15 minutes.
  9. Stretch one dough ball into a thin circle (10-12 inches in diameter).
  10. Spread a thin layer of crushed San Marzano tomatoes over the dough, leaving a 1-inch border for the crust.
  11. Season with salt and pepper, and distribute slices of fresh mozzarella over the tomatoes.
  12. Carefully slide the pizza onto the preheated stone in the wood-fired oven.
  13. Bake for 60-90 seconds, turning halfway through, until the crust is bubbled and charred.
  14. Garnish with fresh basil, drizzle with olive oil, and sprinkle with red pepper flakes if desired.
  15. Repeat with the second dough ball, slice, and serve immediately.

Notes

Serve with a scoop of homemade gelato or a light salad. This pizza pairs wonderfully with lemonade or red sangria. Store leftovers in aluminum foil or an airtight container.
