Instructions
- Preheat your oven to 350 degrees.
- Line a standard 12-cup muffin tin with liners.
- Whisk the dry ingredients together in a large bowl: flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
- Mix the wet ingredients: add in the buttermilk, oil, beaten egg, and vanilla. Whisk until smooth.
- Incorporate boiling water and whisk until fully combined.
- Fill the cupcake liners with 1/4 cup of batter, filling them two-thirds full.
- Bake for 18 to 20 minutes, until risen and a tester comes out clean.
- Cool completely in the muffin tin for about an hour.
- Prepare the frosting: beat the powdered sugar, butter, vanilla, and salt on medium-high until bright white and smooth.
- Add green food coloring and beat until evenly incorporated.
- Pipe the frosting into a brain design on each cupcake.
- Drizzle red gel to mimic blood and refrigerate until ready to serve.
Notes
Make sure to pipe the frosting while the cupcakes are cool for cleaner designs. For a healthier version, consider using unsweetened applesauce, almond milk, or a gluten-free baking blend.
