Ingredients

  • 1 large egg, beaten

  • 1/4 cup boiling water
  • 4 cups powdered sugar, sifted
  • 1 1/2 cups unsalted butter, room temperature
  • 1 tsp. pure vanilla extract
  • 1/4 tsp. kosher salt
  • 2 to 3 drops neon green liquid food coloring
  • Red decorating gel, for drizzling

Instructions

  1. Preheat your oven to 350 degrees.
  2. Line a standard 12-cup muffin tin with liners.
  3. Whisk the dry ingredients together in a large bowl: flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
  4. Mix the wet ingredients: add in the buttermilk, oil, beaten egg, and vanilla. Whisk until smooth.
  5. Incorporate boiling water and whisk until fully combined.
  6. Fill the cupcake liners with 1/4 cup of batter, filling them two-thirds full.
  7. Bake for 18 to 20 minutes, until risen and a tester comes out clean.
  8. Cool completely in the muffin tin for about an hour.
  9. Prepare the frosting: beat the powdered sugar, butter, vanilla, and salt on medium-high until bright white and smooth.
  10. Add green food coloring and beat until evenly incorporated.
  11. Pipe the frosting into a brain design on each cupcake.
  12. Drizzle red gel to mimic blood and refrigerate until ready to serve.

Notes

Make sure to pipe the frosting while the cupcakes are cool for cleaner designs. For a healthier version, consider using unsweetened applesauce, almond milk, or a gluten-free baking blend.
