Description

Delicious Zucchini Banana Oat Bars with the sweetness of ripe bananas and fresh zucchini, perfect for a quick snack or dessert.


Ingredients

  • 2 ripe bananas, mashed
  • 1 cup fresh zucchini, grated
  • 1 cup old-fashioned oats
  • 2 room temperature eggs
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp pure vanilla extract
  • 1 cup all-purpose flour
  • 1/4 cup oil or melted butter

Instructions

  1. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
  2. Mash ripe bananas in a mixing bowl until mostly smooth.
  3. Mix the mashed bananas with eggs, vanilla extract, and oil or melted butter.
  4. In a separate bowl, whisk together flour, oats, cinnamon, and nutmeg.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Pour the batter into a greased baking dish and bake at 350°F (175°C) for 25-30 minutes, rotating halfway through.
  7. Let the bars cool completely before slicing.
