- 2 ripe bananas, mashed
- 1 cup fresh zucchini, grated
- 1 cup old-fashioned oats
- 2 room temperature eggs
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp pure vanilla extract
- 1 cup all-purpose flour
- 1/4 cup oil or melted butter
Instructions
- Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
- Mash ripe bananas in a mixing bowl until mostly smooth.
- Mix the mashed bananas with eggs, vanilla extract, and oil or melted butter.
- In a separate bowl, whisk together flour, oats, cinnamon, and nutmeg.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Pour the batter into a greased baking dish and bake at 350°F (175°C) for 25-30 minutes, rotating halfway through.
- Let the bars cool completely before slicing.
