Description

Ingredients

  • 2 cups grated zucchini
  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cup brown sugar
  • 2 large eggs
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a loaf pan generously with butter or line it with parchment paper.
  3. Rinse and grate the zucchini, then squeeze out excess moisture using a kitchen towel.
  4. In a large mixing bowl, whisk together the eggs, granulated sugar, and brown sugar until smooth. Stir in the grated zucchini.
  5. In another bowl, combine flour, baking soda, baking powder, cinnamon, and salt.
  6. Gradually fold the dry ingredients into the wet mixture until just combined; do not overmix.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60-70 minutes or until a toothpick inserted comes out clean.
  9. Let the loaf cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
