- 1.5 cups all-purpose flour
- 1 cup granulated sugar
- 0.5 cup brown sugar
- 2 large eggs
- 1 tsp cinnamon
- 1 tsp baking soda
- 1 tsp baking powder
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a loaf pan generously with butter or line it with parchment paper.
- Rinse and grate the zucchini, then squeeze out excess moisture using a kitchen towel.
- In a large mixing bowl, whisk together the eggs, granulated sugar, and brown sugar until smooth. Stir in the grated zucchini.
- In another bowl, combine flour, baking soda, baking powder, cinnamon, and salt.
- Gradually fold the dry ingredients into the wet mixture until just combined; do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60-70 minutes or until a toothpick inserted comes out clean.
- Let the loaf cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
Notes
For best results, grate the zucchini as finely as possible to reduce moisture. Consider using whole wheat flour for added fiber and a healthier twist.
