- 2 cups digestive cookies or graham crackers (270g)
- ½ cup butter, melted (113g)
- ¼ teaspoon salt
- 2 tablespoons powdered sugar
- 3 cups fresh apple cider
- Mulling spices (cinnamon, cloves)
- 3 bricks cream cheese (227g each, softened)
- 1 cup brown sugar (220g)
- ½ teaspoon salt
- 2 teaspoons pure vanilla extract
- 1 cup sour cream (240g)
- 1/3 cup reduced apple cider
- 1 teaspoon cinnamon
- 3 large eggs
- 2 tablespoons all-purpose flour
Instructions
- Pour 3 cups of fresh apple cider into a pot, add mulling spices, and bring to a boil. Simmer for about 1 hour until it reduces to 1/3 cup of syrup. Let cool.
- Preheat your oven to 350°F (175°C).
- Blend digestive cookies or graham crackers until finely ground. Mix with melted butter, salt, and powdered sugar. Press into the bottom of a springform pan and bake for 10 minutes. Let cool.
- Reduce oven temperature to 325°F (160°C).
- Cream together cream cheese and brown sugar until smooth.
- Add sour cream, vanilla, salt, cinnamon, and cooled reduced apple cider. Mix until creamy.
- Slowly add eggs, one at a time, mixing until combined. Incorporate flour.
- Prepare a water bath by placing the springform pan in a larger pan filled with water.
- Pour cheesecake filling into the crust and bake for 90 minutes.
- Turn off oven and leave cheesecake inside for an additional 30 minutes to cool.
- Cool at room temperature for 15 minutes, then refrigerate for at least 8 hours before serving.
Notes
For best results, use room temperature cream cheese and eggs. Serve topped with whipped cream and a sprinkle of cinnamon.
