Description

A rich and creamy dessert that captures the essence of autumn with flavors of apple cider and warm spices, perfect for any seasonal gathering.


Ingredients

  • 2 cups digestive cookies or graham crackers (270g)
  • ½ cup butter, melted (113g)
  • ¼ teaspoon salt
  • 2 tablespoons powdered sugar
  • 3 cups fresh apple cider
  • Mulling spices (cinnamon, cloves)
  • 3 bricks cream cheese (227g each, softened)
  • 1 cup brown sugar (220g)
  • ½ teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 1 cup sour cream (240g)
  • 1/3 cup reduced apple cider
  • 1 teaspoon cinnamon
  • 3 large eggs
  • 2 tablespoons all-purpose flour

Instructions

  1. Pour 3 cups of fresh apple cider into a pot, add mulling spices, and bring to a boil. Simmer for about 1 hour until it reduces to 1/3 cup of syrup. Let cool.
  2. Preheat your oven to 350°F (175°C).
  3. Blend digestive cookies or graham crackers until finely ground. Mix with melted butter, salt, and powdered sugar. Press into the bottom of a springform pan and bake for 10 minutes. Let cool.
  4. Reduce oven temperature to 325°F (160°C).
  5. Cream together cream cheese and brown sugar until smooth.
  6. Add sour cream, vanilla, salt, cinnamon, and cooled reduced apple cider. Mix until creamy.
  7. Slowly add eggs, one at a time, mixing until combined. Incorporate flour.
  8. Prepare a water bath by placing the springform pan in a larger pan filled with water.
  9. Pour cheesecake filling into the crust and bake for 90 minutes.
  10. Turn off oven and leave cheesecake inside for an additional 30 minutes to cool.
  11. Cool at room temperature for 15 minutes, then refrigerate for at least 8 hours before serving.

Notes

For best results, use room temperature cream cheese and eggs. Serve topped with whipped cream and a sprinkle of cinnamon.
