- 1 cup walnuts, finely chopped
- 1 cup pistachios, finely chopped
- 1/2 cup melted butter
- 1/2 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1 package of phyllo dough (about 12 sheets)
- 16 oz cream cheese, softened
- 1 cup sour cream
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/2 cup honey
- 1/4 cup water
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the walnuts, pistachios, melted butter, granulated sugar, and ground cinnamon. Stir until well coated.
- Brush a 9-inch springform pan with melted butter and layer 5 sheets of phyllo dough, brushing melted butter between each sheet.
- Spread the nut mixture evenly on top of the phyllo layer.
- Bake for 15-20 minutes or until golden brown. Let cool.
- In a bowl, beat softened cream cheese until smooth. Add sour cream, granulated sugar, and vanilla extract. Mix until combined. Incorporate eggs one at a time.
- Pour the cheesecake mixture over the cooled nut crust, folding the phyllo edges over the filling.
- Bake for 45-50 minutes or until set with a slight jiggle in the center.
- Prepare honey syrup by boiling honey, water, granulated sugar, vanilla extract, and ground cinnamon in a saucepan for 10 minutes.
- Cool the cheesecake and refrigerate for at least 4 hours or overnight.
- Before serving, drizzle honey syrup over the cheesecake and slice.
