Ingredients

  • 1 cup walnuts, finely chopped
  • 1 cup pistachios, finely chopped
  • 1/2 cup melted butter
  • 1/2 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1 package of phyllo dough (about 12 sheets)
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup honey
  • 1/4 cup water
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the walnuts, pistachios, melted butter, granulated sugar, and ground cinnamon. Stir until well coated.
  3. Brush a 9-inch springform pan with melted butter and layer 5 sheets of phyllo dough, brushing melted butter between each sheet.
  4. Spread the nut mixture evenly on top of the phyllo layer.
  5. Bake for 15-20 minutes or until golden brown. Let cool.
  6. In a bowl, beat softened cream cheese until smooth. Add sour cream, granulated sugar, and vanilla extract. Mix until combined. Incorporate eggs one at a time.
  7. Pour the cheesecake mixture over the cooled nut crust, folding the phyllo edges over the filling.
  8. Bake for 45-50 minutes or until set with a slight jiggle in the center.
  9. Prepare honey syrup by boiling honey, water, granulated sugar, vanilla extract, and ground cinnamon in a saucepan for 10 minutes.
  10. Cool the cheesecake and refrigerate for at least 4 hours or overnight.
  11. Before serving, drizzle honey syrup over the cheesecake and slice.
