Description

A quick and indulgent bowl of ramen noodles in a creamy peanut sauce, perfect for family dinners or solo comfort dining.


Ingredients

  • 2 packs of instant ramen noodles
  • 2 tablespoons peanut butter (creamy)
  • 2 tablespoons soy sauce
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon lime juice
  • 1 tablespoon sriracha sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1/4 cup chopped scallions
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped peanuts
  • Lime wedges for serving

Instructions

  1. In a large pot, bring water to a rolling boil. Cook the ramen noodles according to package instructions, omitting the seasoning packets. Once tender yet chewy, drain and set aside.
  2. In a mixing bowl, whisk together the peanut butter, soy sauce, sweet chili sauce, lime juice, and sriracha until smooth and luxurious.
  3. Heat sesame oil and vegetable oil in a skillet over medium heat. Add minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
  4. Pour the sauce into the skillet, mixing well with the garlic and ginger. Add the drained noodles, stirring to coat them evenly in the sauce.
  5. Remove from heat, garnish with scallions, cilantro, and peanuts. Serve immediately with lime wedges on the side.

Notes

For a healthier option, consider swapping out the sweet chili sauce for a homemade low-sugar version or adding vegetables for extra nutrition.
