- 2 packs of instant ramen noodles
- 2 tablespoons peanut butter (creamy)
- 2 tablespoons soy sauce
- 2 tablespoons sweet chili sauce
- 1 tablespoon lime juice
- 1 tablespoon sriracha sauce
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1/4 cup chopped scallions
- 1/4 cup chopped cilantro
- 1/4 cup chopped peanuts
- Lime wedges for serving
Instructions
- In a large pot, bring water to a rolling boil. Cook the ramen noodles according to package instructions, omitting the seasoning packets. Once tender yet chewy, drain and set aside.
- In a mixing bowl, whisk together the peanut butter, soy sauce, sweet chili sauce, lime juice, and sriracha until smooth and luxurious.
- Heat sesame oil and vegetable oil in a skillet over medium heat. Add minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
- Pour the sauce into the skillet, mixing well with the garlic and ginger. Add the drained noodles, stirring to coat them evenly in the sauce.
- Remove from heat, garnish with scallions, cilantro, and peanuts. Serve immediately with lime wedges on the side.
Notes
For a healthier option, consider swapping out the sweet chili sauce for a homemade low-sugar version or adding vegetables for extra nutrition.
