Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 ½ cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 ½ cups fresh blackberries, plus extra for garnish
  • 1 tablespoon lemon juice
  • 1 cup heavy cream
  • 10 ounces dark chocolate, chopped
  • 2 tablespoons corn syrup
  • 1 teaspoon vanilla extract (for ganache)

Instructions

  1. Preheat your oven to 350°F (180°C) and prep two 9-inch round cake pans by greasing and flouring them.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate bowl, beat the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition, followed by buttermilk and vanilla extract.
  5. Gradually mix the dry ingredients into the wet ingredients on low speed until just combined.
  6. Toss blackberries with lemon juice in a small bowl, then gently fold into the batter.
  7. Pour the batter into the prepared pans and bake for 25-30 minutes; check for doneness with a toothpick.
  8. Let cakes cool in the pans for 10 minutes before transferring to a wire rack.
  9. Heat heavy cream in a saucepan until simmering, then remove from heat and stir in dark chocolate, corn syrup, and vanilla extract. Let sit for 5 minutes, then stir until smooth.
  10. Once cakes are cool, place one layer on a serving plate, spread ganache on top, then place the second layer on top and cover with the remaining ganache.
  11. Garnish with extra fresh blackberries and let the ganache set for about 30 minutes before serving.

Notes

Sifting the dry ingredients helps create a smoother batter. Use room temperature ingredients for better mixing.
