- 2 cups all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 ½ cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1 ½ cups fresh blackberries, plus extra for garnish
- 1 tablespoon lemon juice
- 1 cup heavy cream
- 10 ounces dark chocolate, chopped
- 2 tablespoons corn syrup
- 1 teaspoon vanilla extract (for ganache)
Instructions
- Preheat your oven to 350°F (180°C) and prep two 9-inch round cake pans by greasing and flouring them.
- In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
- In a separate bowl, beat the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition, followed by buttermilk and vanilla extract.
- Gradually mix the dry ingredients into the wet ingredients on low speed until just combined.
- Toss blackberries with lemon juice in a small bowl, then gently fold into the batter.
- Pour the batter into the prepared pans and bake for 25-30 minutes; check for doneness with a toothpick.
- Let cakes cool in the pans for 10 minutes before transferring to a wire rack.
- Heat heavy cream in a saucepan until simmering, then remove from heat and stir in dark chocolate, corn syrup, and vanilla extract. Let sit for 5 minutes, then stir until smooth.
- Once cakes are cool, place one layer on a serving plate, spread ganache on top, then place the second layer on top and cover with the remaining ganache.
- Garnish with extra fresh blackberries and let the ganache set for about 30 minutes before serving.
Notes
Sifting the dry ingredients helps create a smoother batter. Use room temperature ingredients for better mixing.
