Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
- Add the egg and vanilla extract to the butter mixture; beat until fully combined.
- Slowly add the flour mixture to the wet ingredients, mixing on low speed until just incorporated.
- In a small saucepan, heat the heavy cream until just bubbling, then whisk in the cornstarch until smooth.
- Allow the cream mixture to cool slightly before gently folding it into the cookie dough.
- Using a cookie scoop or tablespoons, drop dollops of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden but the centers still seem soft.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Sprinkle about 1 teaspoon of granulated sugar on top of each cookie.
- Carefully caramelize the sugar using a kitchen torch or under a broiler for a few seconds. Let cool before serving.
Notes
Use room temperature butter for the best texture. Consider adding spices like cinnamon or espresso powder for a flavor twist.
