Ingredients

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
  4. Add the egg and vanilla extract to the butter mixture; beat until fully combined.
  5. Slowly add the flour mixture to the wet ingredients, mixing on low speed until just incorporated.
  6. In a small saucepan, heat the heavy cream until just bubbling, then whisk in the cornstarch until smooth.
  7. Allow the cream mixture to cool slightly before gently folding it into the cookie dough.
  8. Using a cookie scoop or tablespoons, drop dollops of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes, or until the edges are lightly golden but the centers still seem soft.
  10. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
  11. Sprinkle about 1 teaspoon of granulated sugar on top of each cookie.
  12. Carefully caramelize the sugar using a kitchen torch or under a broiler for a few seconds. Let cool before serving.
