Description

A comforting seafood pot pie topped with fluffy Cheddar Bay biscuits, combining shrimp, crabmeat, and a creamy filling.


Ingredients

  • 2 tablespoons Olive Oil
  • 1 pound Shrimp, peeled and deveined
  • 1 cup Langostino Tails or Lobster
  • 1 cup Jumbo Lump Crabmeat
  • 1 cup Onions, diced
  • 1 cup Bell Peppers, diced
  • 1 cup Celery, diced
  • 2 cloves Garlic, minced
  • 1 teaspoon Thyme, fresh
  • 1 teaspoon Tarragon, fresh
  • 2 tablespoons Flour
  • 2 tablespoons Butter
  • 2 cups Chicken Broth
  • 1 cup Heavy Cream
  • 1 teaspoon Smoked Paprika
  • Salt and Pepper, to taste
  • 1 package Cheddar Bay Biscuit Mix
  • 1 cup Cheddar Cheese, shredded
  • 1/2 cup Milk
  • 1 Garlic Herb Packet
  • 2 tablespoons Extra Butter, melted

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add shrimp and langostino tails; sauté until pink and opaque, about 3 minutes.
  2. Remove seafood and set aside. In the same skillet, lower heat to medium and sauté onions, celery, and bell peppers for 4-5 minutes.
  3. Add butter to the pan and allow it to melt. Sprinkle flour over it and whisk to make a roux.
  4. Gradually pour in chicken broth while stirring continuously. Add heavy cream and simmer for 3-4 minutes until thickened. Stir in garlic, thyme, tarragon, smoked paprika, salt, and pepper, then fold in cooked seafood.
  5. In a separate bowl, mix the Cheddar Bay Biscuit mix with cheddar cheese and milk until combined.
  6. Preheat oven to 425°F (220°C). Pour seafood filling into a greased baking dish and dollop biscuit dough on top.
  7. Bake for 14-16 minutes until biscuits are golden brown.
  8. Brush biscuits with melted butter and garlic herb seasoning, let cool for 5-10 minutes before serving.

Notes

For extra flavor, add a dash of lemon juice to the filling before baking. Feel free to add chopped spinach or peas for added nutrition.
