Description

A warm, gooey dip filled with savory meatballs and creamy cheese, perfect for parties and family gatherings.


Ingredients

  • 12 oz. hot Italian sausage, casings discarded, shaped into 1/2” balls
  • 1 small red onion, finely chopped
  • 1 jalapeno, finely chopped
  • 3 cloves garlic, finely chopped
  • 1/2 tsp. kosher salt
  • 1/2 tsp. freshly ground black pepper
  • 1 cup BBQ sauce
  • 1 (8-oz.) block cream cheese, cubed
  • 3/4 cup freshly shredded American cheese
  • 3/4 cup freshly shredded cheddar
  • 1/4 cup pickled red onions, finely chopped, plus more for topping
  • 1/4 cup whole milk
  • 1 scallion, thinly sliced, for topping
  • Tortilla chips, for serving

Instructions

  1. In a medium skillet over medium heat, cook the Italian sausage until deeply golden, shaking the skillet occasionally for an even cook, about 7 to 9 minutes.
  2. Transfer the meatballs to a plate, keeping about 2 tablespoons of the flavorful fat in the skillet.
  3. Add the finely chopped onions, jalapeno, garlic, salt, and pepper to the skillet. Cook until golden and lightly caramelized, approximately 3 to 4 minutes.
  4. Reduce heat to medium-low, add BBQ sauce, cooked meatballs, and cream cheese. Stir until smooth and creamy.
  5. Stir in shredded American and cheddar cheeses, pickled red onions, and milk until fully incorporated.
  6. Garnish with sliced scallions and extra pickled red onions. Serve with tortilla chips.

Notes

For a lighter option, substitute with lean turkey sausage and reduced-fat cheeses.
