Description

Delightful Cherry Pie Bars, combining the nostalgic flavors of cherry pie in a convenient bar form, perfect for any occasion.


Ingredients

  • 1 and 1/2 cups all-purpose flour
  • 1 cup plus 2 Tablespoons old-fashioned whole rolled oats
  • 1/2 cup packed light or dark brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon lemon zest
  • 1/8 teaspoon salt
  • 10 Tablespoons unsalted butter, melted
  • 1 teaspoon pure vanilla extract
  • 1 and 1/2 Tablespoons cornstarch
  • 3 and 1/2 cups frozen sour cherries
  • 1/2 cup granulated sugar
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon almond extract
  • 1 cup confectioners sugar (optional for icing)
  • 2 Tablespoons milk (optional for icing)
  • 1/4 teaspoon almond extract (optional for icing)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9-inch square baking pan with parchment paper.
  2. Make the crust: In a bowl, whisk together flour, oats, brown sugar, baking powder, lemon zest, and salt. Pour in melted butter and vanilla; mix until crumbly. Press 2/3 of the mixture into the bottom of the prepared pan and bake for 10 minutes.
  3. Make the filling: In a saucepan, combine cherries, granulated sugar, and lemon juice. Cook on medium heat until cherries release juices. Mix some juice with cornstarch, stir back into filling, and bring to a boil until thickened. Add almond extract.
  4. Pour the filling over the pre-baked crust. Add remaining oats to the crumble and sprinkle over topping. Bake for 40-50 minutes until golden brown.
  5. Cool completely before slicing. Optional: whisk icing ingredients and drizzle over cooled bars.

Store leftovers in an airtight container for up to 4 days, or freeze for longer storage.
