Description

Indulge in warm, gooey Chewy Chocolate Chip Cookies that evoke childhood memories with their perfect balance of soft and chewy textures.

Ingredients

Scale
  • 2 and 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 and 1/2 teaspoons cornstarch
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, melted and cooled
  • 3/4 cup packed light or dark brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 teaspoons pure vanilla extract
  • 1 and 1/4 cups semi-sweet chocolate chips or chocolate chunks

Instructions

  1. In a large bowl, whisk together the flour, baking soda, cornstarch, and salt until fully blended. Set aside.
  2. In a medium bowl, blend the melted butter, brown sugar, and granulated sugar until smooth. Add the egg, egg yolk, and vanilla extract, whisking until completely combined.
  3. Pour the wet ingredients into the dry ones, mixing until blended. Fold in the semi-sweet chocolate chips.
  4. Cover the dough tightly with plastic wrap and refrigerate for at least 2 hours.
  5. Preheat your oven to 325°F (163°C). Line baking sheets with parchment paper.
  6. Let the chilled dough sit at room temperature for about 15 minutes. Roll the dough into balls and place on baking sheets.
  7. Bake for 13-14 minutes or until the edges turn lightly golden. Cool on baking sheet for 10 minutes before transferring to a wire rack.
  8. Store in an airtight container for up to one week.

Notes

Chilling the dough is essential for achieving the ideal chewy texture. Consider adding nuts or a sprinkle of sea salt for extra flavor.
