Description

A quick and delicious Chicken Chow Mein recipe that combines tender chicken, crisp vegetables, and chewy noodles in a savory sauce.


Ingredients

  • 2 boneless, skinless chicken breasts, sliced into thin strips
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 3 tablespoons vegetable oil, divided
  • 200 g chow mein noodles
  • 1 onion, thinly sliced
  • 1 red bell pepper, julienned
  • 2 cups bean sprouts
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 2 tablespoons light soy sauce
  • 1 tablespoon sesame oil
  • 3 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, mix the chicken strips with 1 tablespoon soy sauce, 1 tablespoon oyster sauce, and cornstarch. Let marinate for 15 minutes.
  2. Cook the chow mein noodles according to package instructions, drain, and set aside.
  3. Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the marinated chicken and stir-fry until cooked through, about 5-7 minutes. Remove from the wok and set aside.
  4. In the same wok, add another tablespoon of vegetable oil and sauté the onion and bell pepper for about 3 minutes.
  5. Add the garlic and ginger, cooking for an additional minute.
  6. Return the chicken to the wok, add the bean sprouts, and stir everything together.
  7. In a small bowl, mix together 2 tablespoons soy sauce, 1 tablespoon oyster sauce, light soy sauce, and sesame oil. Pour it over the chicken and vegetable mixture.
  8. Add the cooked noodles to the wok and toss everything to combine.
  9. Adjust seasoning with salt and pepper to taste.
  10. Turn off the heat, garnish with chopped green onions, and serve hot.

Notes

For a lighter option, swap traditional chow mein noodles for whole grain or zucchini noodles.
