- 2 boneless, skinless chicken breasts, sliced into thin strips
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon cornstarch
- 3 tablespoons vegetable oil, divided
- 200 g chow mein noodles
- 1 onion, thinly sliced
- 1 red bell pepper, julienned
- 2 cups bean sprouts
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 2 tablespoons light soy sauce
- 1 tablespoon sesame oil
- 3 green onions, chopped
- Salt and pepper to taste
Instructions
- In a medium bowl, mix the chicken strips with 1 tablespoon soy sauce, 1 tablespoon oyster sauce, and cornstarch. Let marinate for 15 minutes.
- Cook the chow mein noodles according to package instructions, drain, and set aside.
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the marinated chicken and stir-fry until cooked through, about 5-7 minutes. Remove from the wok and set aside.
- In the same wok, add another tablespoon of vegetable oil and sauté the onion and bell pepper for about 3 minutes.
- Add the garlic and ginger, cooking for an additional minute.
- Return the chicken to the wok, add the bean sprouts, and stir everything together.
- In a small bowl, mix together 2 tablespoons soy sauce, 1 tablespoon oyster sauce, light soy sauce, and sesame oil. Pour it over the chicken and vegetable mixture.
- Add the cooked noodles to the wok and toss everything to combine.
- Adjust seasoning with salt and pepper to taste.
- Turn off the heat, garnish with chopped green onions, and serve hot.
Notes
For a lighter option, swap traditional chow mein noodles for whole grain or zucchini noodles.
