Description

Ingredients

  • 10 stand-and-stuff taco shells
  • 1 pound ground chicken
  • 1 cup enchilada sauce
  • 1 1/2 cups Chipotle fajita veggies
  • 8 ounces Colby Jack cheese, shredded

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Arrange the taco shells in a 9ร—13 baking dish.
  3. In a skillet over medium heat, cook the ground chicken until fully cooked through, about 5-8 minutes.
