- 10 stand-and-stuff taco shells
- 1 pound ground chicken
- 1 cup enchilada sauce
- 1 1/2 cups Chipotle fajita veggies
- 8 ounces Colby Jack cheese, shredded
Instructions
- Preheat the oven to 400 degrees F.
- Arrange the taco shells in a 9ร13 baking dish.
- In a skillet over medium heat, cook the ground chicken until fully cooked through, about 5-8 minutes.
- Drain any excess grease. Stir in the enchilada sauce and heat for 1-2 minutes.
- Spoon the chicken mixture into each taco shell.
- Top with fajita veggies and shredded cheese.
- Bake for 15 minutes or until the shells are crispy and cheese is melted.
- Serve with desired toppings.
