Description

Ingredients

  • 6 large flour tortillas
  • 1 pound ground beef
  • 1 cup water
  • 2 cups shredded cheese
  • 1 can refried pinto beans
  • 2 cups vegetable oil
  • 1 tablespoon chili powder
  • 1/2 tablespoon seasoned salt
  • 1/2 tablespoon ground cumin
  • 1 teaspoon black pepper
  • 1 teaspoon garlic salt or garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 – 1 cup water (as needed)
  • Optional toppings: Sour cream, shredded lettuce, salsa, chopped tomatoes

Instructions

  1. Brown the ground beef in a skillet over medium heat until fully cooked.
  2. Drain the excess grease, return the beef to the skillet, add all seasonings and 1 cup of water, stirring well. Simmer until the water is absorbed.
  3. Heat vegetable oil in a separate skillet over medium heat.
  4. Spread refried beans on one side of a tortilla and add seasoned beef mixture and cheese.
  5. Roll the tortilla tightly, folding in the sides before sealing.
  6. Fry the chimichanga seam-side down until golden brown, about 1-2 minutes per side.
  7. Drain on paper towels, garnish with toppings, and serve hot.

Notes

Enjoy with sides like rice or topped with ice cream for dessert. For healthier options, consider using ground turkey and whole wheat tortillas.
