- 6 large flour tortillas
- 1 pound ground beef
- 1 cup water
- 2 cups shredded cheese
- 1 can refried pinto beans
- 2 cups vegetable oil
- 1 tablespoon chili powder
- 1/2 tablespoon seasoned salt
- 1/2 tablespoon ground cumin
- 1 teaspoon black pepper
- 1 teaspoon garlic salt or garlic powder
- 1/2 teaspoon dried oregano
- 1/2 – 1 cup water (as needed)
- Optional toppings: Sour cream, shredded lettuce, salsa, chopped tomatoes
Instructions
- Brown the ground beef in a skillet over medium heat until fully cooked.
- Drain the excess grease, return the beef to the skillet, add all seasonings and 1 cup of water, stirring well. Simmer until the water is absorbed.
- Heat vegetable oil in a separate skillet over medium heat.
- Spread refried beans on one side of a tortilla and add seasoned beef mixture and cheese.
- Roll the tortilla tightly, folding in the sides before sealing.
- Fry the chimichanga seam-side down until golden brown, about 1-2 minutes per side.
- Drain on paper towels, garnish with toppings, and serve hot.
Notes
