- 2 cups confectioners sugar
- 6 tablespoons unsweetened cocoa powder (for frosting)
- 3 tablespoons heavy cream or milk, slightly warm
- 1 teaspoon pure vanilla extract (for frosting)
- Pinch of salt (for frosting)
- 1/4 cup sprinkles (for topping)
Instructions
- In a large bowl, beat the softened butter, vegetable oil, granulated sugar, and brown sugar together until light and fluffy. Add the egg and pure vanilla extract, mixing until combined.
- In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt. Gradually add to the wet ingredients, forming the dough. Chill in the fridge for at least two hours.
- Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
- Scoop tablespoon-sized portions of dough onto the prepared sheets, leaving space between them. Bake for 12-13 minutes until just set. Cool on sheets for 10 minutes, then transfer to a wire rack.
- For the frosting, beat the softened butter until creamy, then mix in confectioners’ sugar, cocoa powder, heavy cream, vanilla extract, and a pinch of salt until smooth.
- Spread frosting on cooled cookies and top with sprinkles. Store at room temperature for up to one day or in the fridge for up to five days.
