Description

A warm, nostalgic loaf with a tender interior and a heavenly cinnamon-sugar swirl.

Ingredients

Scale
  • 4 cups bread flour
  • 2 1/4 tsp active dry yeast
  • 1 cup whole milk
  • 1/4 cup unsalted butter, melted
  • 2 tsp ground cinnamon
  • 1/2 cup sugar
  • 1 tsp salt
  • 1 egg white

Instructions

  1. Proof the yeast by combining warm water with a pinch of sugar, then sprinkle the active dry yeast over top and let it foam.
  2. Warm the milk and mix it with the slightly cooled melted butter.
  3. In a bowl, combine flour, sugar, and salt.
  4. Pour the warm milk mixture into the dry ingredients, mixing until a shaggy dough forms.
  5. Knead the dough on a clean surface for 8-10 minutes until smooth and elastic.
  6. Place the kneaded dough in a greased bowl, cover it, and let it rise until it doubles in size.
  7. Punch down the risen dough and roll it into an 8×20 inch rectangle. Brush it with egg white and sprinkle the cinnamon-sugar mixture on top.
  8. Roll the dough tightly into a log, pinching the seams to seal.
  9. Place the loaf in a greased pan, let it rise again, then bake until golden brown.
  10. Let it cool before slicing.
