- 1 3/4 cups whole milk
- 1 3/4 cups chicken broth or water
- 1 tablespoon salt
- 3 1/2 tablespoons butter
- 2 large starchy potatoes, peeled, boiled, and mashed
- 3 1/2 cups all-purpose flour, sifted
- 2 large boneless skinless chicken breasts
- 1/4 cup butter
- 1 small onion, finely chopped
- 4 garlic cloves, minced
- 1 tablespoon paprika
- 2 tablespoons cream cheese
- 4 tablespoons tomato sauce
- 1 tablespoon water
- Salt and black pepper to taste
- Chopped fresh parsley to taste
- 1/2 cup milk (for breading)
- Bread crumbs as needed
- Vegetable oil for deep frying
Instructions
- Cook chicken breasts in broth or water for about 10 minutes, let cool, then shred.
- In a skillet, melt butter, sauté onions for 2 minutes, add garlic, then stir in paprika, tomato sauce, chicken, cream cheese, and parsley. Season and cool the filling.
- Combine milk, broth, butter, and mashed potatoes in a large pot. Bring to a boil, gradually mix in flour, and cook for 5–7 minutes.
- Shape portions of dough around a spoonful of filling into teardrop shapes.
- Dip in milk, roll in breadcrumbs, then fry in oil at 350°F for 3-4 minutes per side until golden brown.
Notes
Coxinhas can be made ahead and frozen. Bake or fry from frozen for best results.
