- 2 large sweet potatoes
- 1 cup fresh cranberries
- 1 apple, chopped
- 1/4 cup brown sugar
- 1/2 teaspoon cinnamon
- 2 tablespoons butter
- Salt and pepper to taste
- 1/4 cup chopped pecans (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Prick the sweet potatoes with a fork and arrange them on a baking sheet. Bake for 45-60 minutes until tender.
- In a medium-sized saucepan, combine cranberries, chopped apple, brown sugar, cinnamon, and 1/4 cup of water. Cook over medium heat until cranberries burst, about 10-15 minutes.
- Once sweet potatoes are done, cut them in half lengthwise and scoop out the flesh.
- In a large mixing bowl, combine sweet potato flesh with the cranberry-apple mixture, butter, salt, and pepper. Blend until creamy.
- Spoon the mixture back into the sweet potato skins, mounding the filling.
- If desired, top with chopped pecans.
- Return stuffed sweet potatoes to the oven and bake for an additional 15-20 minutes until heated through and slightly browned.
Notes
Select sweet potatoes that are firm and heavy for their size. Consider adding a splash of orange juice or zest for extra flavor.
