Description

A delightful dish blending the earthiness of sweet potatoes with tart cranberries and sweet apples, perfect for festive gatherings or cozy family dinners.


Ingredients

  • 2 large sweet potatoes
  • 1 cup fresh cranberries
  • 1 apple, chopped
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1/4 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prick the sweet potatoes with a fork and arrange them on a baking sheet. Bake for 45-60 minutes until tender.
  3. In a medium-sized saucepan, combine cranberries, chopped apple, brown sugar, cinnamon, and 1/4 cup of water. Cook over medium heat until cranberries burst, about 10-15 minutes.
  4. Once sweet potatoes are done, cut them in half lengthwise and scoop out the flesh.
  5. In a large mixing bowl, combine sweet potato flesh with the cranberry-apple mixture, butter, salt, and pepper. Blend until creamy.
  6. Spoon the mixture back into the sweet potato skins, mounding the filling.
  7. If desired, top with chopped pecans.
  8. Return stuffed sweet potatoes to the oven and bake for an additional 15-20 minutes until heated through and slightly browned.

Notes

Select sweet potatoes that are firm and heavy for their size. Consider adding a splash of orange juice or zest for extra flavor.
