- 8 ounces cream cheese, softened
- 8 ounces Brie cheese, softened, rind removed
- 4 ounces sharp white cheddar cheese, shredded
- 1/4 cup chopped fresh chives
- 3/4 cup chopped dried cranberries, divided
- 1/2 cup chopped pistachios
Instructions
- In a mixing bowl, combine cream cheese and Brie until smooth.
- Add shredded white cheddar and mix until well combined.
- Fold in chopped chives and 1/4 cup of dried cranberries.
- Transfer the mixture to plastic wrap and form into a ball.
- Wrap tightly and refrigerate for 1 hour.
- Combine chopped pistachios and remaining dried cranberries on a plate.
- Once chilled, roll the cheese ball in the pistachio and cranberry mixture until fully coated.
- Serve immediately and enjoy!
